Summer is here and fruity cakes are a must have this season. It is the time for fresh juicy pineapples and no one can resist a home baked pineapple cake eggless. Usually pineapple
cakes are soft and are decorated or

First for the base cake –
Ingredients:
This is for basic vanilla cake

1.5 cups (1 cup=250ml) all purpose flour
·
Baking powder 1 tsp
·
Baking soda 1 tsp
·
Butter ½ a cup (melted), you can also
use vegetable oil
·
Water ½ a cup
·
A pinch of salt
·
Sugar ¾ of a cup
·
Yoghurt/curd (may use vegan) 3 tbsp + 1
tbsp water
·
Vanilla essence 1 tsp
·
White vinegar/apple cider vinegar 1tbsp
Method:
Preheat the oven at 180°C.
Sift in all the dry ingredients and add the melted
butter. Then mix the yoghurt with 1tbsp water and add in the vinegar with the
baking soda and mix well.
Then add the vinegar-yoghurt mixture to the dry
ingredient-butter mixture and fold thoroughly to get a lump free smooth batter.
Add vanilla extract (pineapple essence
can also be used).
Grease a baking pan and pour in the batter. Bake it
for 30-35 minutes at 180°C. Check with a tooth pick pricked into the cake mix,
if comes out clean then the cake is ready.
For the pineapple
filling and the frosting:
Ingredients:

Pineapple
2-3 sliced into small pieces
·
A few chunky pieces of pineapple for decoration
·
Icing sugar 4 tbsp
·
Vanilla extract 1/4 tsp
·
Whipped cream (30% fat) 200ml
·
Cherries glazed/ chocolate can also be
used as preferred
Method: with a serrated knife slice the cake
horizontally from the centre so that you get two parts.
Spread filling in between the layers generously and
then place the upper half on top. Use the rest of the mixture as a frosting and
cover the entire outer surface of the cake. Decorate with pineapple cake eggless pieces on top.
