Here is an easy recipe
for baking strawberry cake. It
hardly takes an hour to finish and tastes brilliant.
Cooking time: 20
minutes, prep time: 15 minutes
For base cake:
Ingredients:
o
White cake mix 1 pack(18.25oz)
o
Instant gelatin strawberry flavored 1 pack (3oz)
o
Strawberry
syrup frozen and thawed and pureed 15 oz
o
vegetable oil 1/2 cup
o
water 1/4 a cup
o
eggs – 4
Method: in a large bowl
add in the cake mix, gelatin, eggs, water, oil and strawberry puree and blend
well with an electric blender. Mix until smooth and devoid of lumps.
Preheat the oven at
325°F (180°C) for 30 minutes.
Grease a baking pan (9
inch). Pour in the mixture and bake for 20-30 minutes. Or until a tooth pick
pierced into the cake comes out clean. Take the cake out and cool for 10
minutes. Then cool completely without the pan by placing on wire racks.
For the strawberry frosting and filling:
Ingredients:
o
Butter (softened) ¼ of a cup
o
Cream cheese (softened) 8 oz
o
Strawberry
extract
½ a tsp
o
Strawberry
syrup frozen and thawed and pureed 10 oz.
o
Freshly sliced strawberries for garnish.
o
Confectioner’s sugar 7 cups
Method:
Take a large bowl, and
add butter and cream cheese and beat using an electric beater until soft and
creamy forming peaks. Then pour in ¼ cup of strawberry puree and strawberry
extract ½ tsp. now gradually add the confectioner’s sugar and fold until
smooth and silky.
The leftover syrup can
be saved for smoothies or used in ice creams to add extra flavor.
Now with a serrated
knife cut the cake in half horizontally so that you get two parts, put the
frosting generously in between the layers and spread evenly. Then put back the
top half and spread the rest of the frosting all around the surface of the cake
so as to cover it.
Decorate with sliced
fresh strawberries and serve with
love.
