Craving for something sweet and creamy? Cheese cakes are a creamy decadent indulgence with a bit of fruity
tang to it. This is an eggless
recipe which requires baking. The amounts given here would be enough to make a 9
inch cake.
For the crust:
- 1 and ¾ cups of graham crackers
- Cinnamon 2 tsp
- Butter 1 stick/ ½ cup
To make the crust – uses a gallon size zip lock bag filled
with graham crackers and crush them to a fine crumb with a rolling pin.
Add cinnamon (1tsp) in the bag itself and shake it up. Then
add melted butter also in the same bag and mix thoroughly.
Pour the crumb mix into a spring-form baking pan and press
it down to make a smooth flat surface. Put the pan in the freezer to set.
For the filling:
- 16 oz. of cream cheese
- 2 and ½ cups of sour crea
- Cornstarch 2 tbsp
- Sugar 1 tbsp
- Vanilla essence 1 tsp
- A pinch of salt
Keep the sour cream and cream cheese at room temperature for
30 minutes. Soften the cream cheese with sugar, cornstarch and vanilla essence.
Fold in the sour cream. Get the crust out of the freezer and pour the mixture
on top of crust in the spring form pan. Smoothen the surface with a spatula and
bake in pre heated oven at 375°F for 60 minutes or at least until a
few cracks show up in the middle. You can also choose to bake it in a water
bath for more even cooking of the cake
and to get a smooth crack free top surface.
